Potato Cakes

I had a load of potatoes that needed using up, so I looked for something different to do with them other than the usual boiling/roasting. I’ve not made potato cakes before and fancied having a go. I used this recipe for German potato pancakes. And was happy with the result. Simple and tasty!

Ingredients:

2 eggs
2 tbsp plain flour
1/4 tsp baking powder
1/2 tsp salt
1/4 tsp pepper
6 medium potatoes, peeled and grated
80g onion, chopped
60ml vegetable oil

Method:

1. Beat eggs, flour, baking powder, salt and pepper in a large bowl.
2. Mix in the potatoes and onion.
3. Heat oil on a low-medium heat.
Drop heaping tablespoons of mixture into pan.
Press to flatten. Approx. 3 minutes each side.
4. Place onto a plate lined with kitchen roll.
